Bacon Chipotle Mashed Sweet Potatoes
This is my favorite fall side dish! It goes great with turkey, pork, chicken, or sauteed vegetables. Gluten free, with a little heat and sweet.
Ingredients:
3 Large Sweet Potatoes, or approximately 1 ½ pounds, peeled and cubed.
16 oz Bacon
½ cup Milk
3 Tbsp Butter
1 Lime, juiced, or 2 Tbsp
1 Can Chipotle Chilis in Adobo Sauce
1/3 cup Real Maple Syrup
½ tsp Salt
½ tsp Cinnamon
Directions:
Grill bacon until crisp, set aside on a paper towel. Place sweet potatoes in large pot, cover with water and bring to a boil. Reduce heat and simmer for 15 minutes or until fork tender. Drain and return to pan. Add milk, lime juice, and butter, mash to combine. Remove 2 adobo chili’s from can and finely chop, save the rest for later. Add maple syrup, salt, cinnamon, and chilis, blend until smooth. Pour mixture in a medium size casserole dish, top with chopped bacon.
