Tabbouleh

This traditional Lebanese salad is perfect for summer. The mix of grains, greens, and veggies can be enjoyed as Meze, or eaten for lunch on a bed of greens. 

Ingredients:

  • 1 cup Bulger Wheat, cooked in 1 cup of water

  • 3 cups Finely chopped parsley 

  • ¼ cup Chopped Mint

  • 3 Chopped green onions

  • 2 Medium tomatoes, finely diced

  • 1 Cucumber, peeled, seeded, and finely diced

  • ½ tsp Sea Salt

  • ¼ tsp Cumin

  • ¼ tsp Fresh ground pepper

  • 3 Tbsp Lemon Juice

  • ¼ cup Olive Oil

Directions:

Cook and cool bulger in the refrigerator for 1 hour, then add all ingredients in a large bowl to combine. Serve over romaine lettuce, with pita bread, or as a side with your favorite grilled protein.
