Tabbouleh
This traditional Lebanese salad is perfect for summer. The mix of grains, greens, and veggies can be enjoyed as Meze, or eaten for lunch on a bed of greens.
Ingredients:
1 cup Bulger Wheat, cooked in 1 cup of water
3 cups Finely chopped parsley
¼ cup Chopped Mint
3 Chopped green onions
2 Medium tomatoes, finely diced
1 Cucumber, peeled, seeded, and finely diced
½ tsp Sea Salt
¼ tsp Cumin
¼ tsp Fresh ground pepper
3 Tbsp Lemon Juice
¼ cup Olive Oil
Directions:
Cook and cool bulger in the refrigerator for 1 hour, then add all ingredients in a large bowl to combine. Serve over romaine lettuce, with pita bread, or as a side with your favorite grilled protein.
