Smashed Watermelon Ice Pops
Watermelon is super hydrating eaten raw but freezing it takes it to a whole other level. Frozen watermelon chunks can be used in smoothies, blended in cocktails, or fresh watermelon can be pureed and made into ice cubes and added to water. This is a pureed version that is frozen and portable, perfect for picnics, parties, or at the beach. Try it with or without alcohol, just make sure to label them correctly. Fill the sleeves and freeze, simple to make and easy to take!
Ingredients:
4 cups Fresh Watermelon Cubes
¼ cup Lime simple syrup, see directions below
1/2 cup Vodka, Tequila, or Rum (optional)
Zest from 1 lime, juice from the same lime is optional
8 Popsicle bags
To make lime simple syrup add 1 cup of sugar, 1 cup of water, and rind of 1 lime to a small saucepan. Bring to a low boil, dissolving all the sugar, then simmer, reducing liquid to half. Let cool.
Directions:
Blend all ingredients in a blender until smooth. Pour into popsicle sleeves using a small funnel, seal, and lay flat in the freezer in a shallow pan. Freeze for 8 plus hours, or overnight.
